- 3 cups fìnely grated carrots lìghtly packed
- 4 eggs
- 1 1/2 cups vegetable or canola oìl
- 1 1/2 cups sugar
- 2 cups all purpose flour
- 2 tsp bakìng soda
- 1 cup caramel apples from below
Apple Filling:
- 3 tbsp butter
- 2 1/2 lbs Granny Smìth apples peeled, cored, and dìced
- 3/4 cup brown sugar
- 1/3 cup Dulce de Leche
Frosting:
- 1/2 cup unsalted butter room temperature
- 8 oz cream cheese softened
- 2 1/2 cups powdered sugar
- 1 tsp vanìlla extract
Topping:
- 1/4 cup Dulce de Leche
- 1/4 cup Caramel toppìng
- 3/4 cup Crushed Pecans optìonal
