OMELETTE POTATO

There's nothing too fancy about this rustic Spanish style omelette, just lots of hearty goodness from crispy fried potatoes and onions. Chopped tomatoes and green onions lend even more flavour and color.

Ingredients:

  • Baking paper
  • 1 gratin dish
  • Olive oil
  • Parsley
  • Salt and pepper
  • 1 baking sheet
  • Grated mozzarella
  • 4 eggs
  • 6 large potatoes
  • 1 red onion
  • 1 slice of ham 

Instructions:

  1. Place the potatoes on the baking sheet covered with baking paper, pour a drizzle of olive oil on top, salt and pepper then bake for 45 minutes at 170 ° C
  2. Out of the oven, cut a hat horizontally from each potato. Hollow out the flesh with a spoon and keep it
  3. Mix the eggs, the potato flesh, the ham cut into strips, the sliced ​​onion and the chopped parsley then distribute this mixture among the emptied potatoes
  4. Place all the potatoes in the gratin dish, sprinkle with grated mozzarella then bake for 10 minutes at 170 ° C.
